Tasty Vegetable Soup
- 4 pieces bacon, cooked & crumbled
- 4 medium yukon golden potatoes, peeled and cubed
- 3 medium carrots, sliced
- 1 can whole kernel corn with juice
- 1/2 can italian style green beans with juice
- 1 zucchini with skin, quartered 1/2 inch thick
- 1 can stewed tomatoes
- 1 cup shell noodles
- 1 tablespoon minced garlic
- 1 small yellow onion
- 1 celery stalk
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup vegetable oil
- 4 tablespoons self-rising flour
- 3 quarts water
- In a large pot fry bacon, save oil. Add vegetable oil and saute onions and celery, until tender. Add flour and toss until it forms a nice roux. Add water while stirring. Add all ingredients except zucchini, noodles, and tomatoes. Cook until carrots and potatoes are tender. Add remaining ingredients and cook until noodles and zucchini are tender but not mushy.
