Hot Chicken Salad #2
- 2 c. cut up, cooked chicken
- 2 c. chopped celery
- 1/2 c. chopped almonds or pecans
- 1/2 c. chopped green pepper
- 2 Tbsp. chopped pimento
- 2 Tbsp. chopped onions
- 1 can water chestnuts, chopped
- 1/2 tsp. salt
- 2 Tbsp. lemon juice
- 1/2 c. mayonnaise
- 1 can cream of mushroom soup
- 1 can peas or 1 pkg. frozen peas
- 1 small can mushrooms
- 1/3 c. grated Swiss cheese
- 1 c. crushed potato chips
- Mix all ingredients, except potato chips and grated cheese.
- I usually blend the mushroom soup with mayonnaise, adding a little milk to thin mixture slightly.
- Bake in buttered 1 1/2-quart casserole at 350u0b0 for 30 minutes.
- Sprinkle with chips and cheese and bake another 10 minutes.
