Salmon In Basil Broth
- 1 tablespoon butter
- 6 scallions
- 1 celery stalk
- 1 clove garlic
- 1 bunch basil
- 2 cups chicken stock
- 1/2 cup white wine
- 2 salmon fillets
- 6 shrimp mediums, peeled and deveined
- 1/2 teaspoon tandoori powder or other spicy seasoning
- 1 lime
- salt
- pepper
- parsley for garnish
- Place shrimp in small glass bowl and toss with tandoori powder and juice of lime.
- Melt butter in medium sauce pan and briefly cook chopped scallions, celery, and garlic.
- Place salmon fillets face down in pan and brown for 3 minutes.
- Turn salmon to finish cooking, another 3 minutes or until done.
- Remove salmon from pan and cover to keep warm.
- Add chicken stock and simmer for 3 minutes.
- Let cool, then pour solids and a little of the stock into a blender, add basil, and puree.
- Return to sauce pan and add white wine.
- Simmer for a few minutes.
- Add salt and pepper.
- Cover shrimp and microwave for one minute or until done.
- Place one piece of fish in each serving bowl, and pour broth around the fish.
- Place shrimp down the center of each piece of fish.
- Grind black pepper over the top, and garnish with parsley.
