Ensalada Espanola(Spain)
- 1/4 c. sliced cheese
- 4 slices bacon, fried crisp
- 2 heads romaine lettuce, broken
- 6 green onions, sliced
- 3/4 c. sliced cucumber
- garlic clove
- 1/4 c. hot vinegar
- 1/4 tsp. pepper
- 1/2 c. ripe black olives
- sourdough bread or rye bread
- 1 c. sliced salami
- 1/2 c. sliced celery
- garlic butter
- 1/4 c. sliced green pepper
- 3 medium firm tomatoes, quartered
- 1/2 c. hot bean drippings
- 1 tsp. garlic salt
- 3 sliced hard-boiled eggs
- Cut cheese and salami into 1-inch strips.
- Crush bacon.
- Mix cheese, salami and bacon with lettuce, onions, celery, green pepper, cucumbers and tomatoes; toss lightly in a wooden bowl, rubbed with garlic.
- Mix vinegar, bean drippings, pepper and salt and pour over the salad.
- Decorate with olives and eggs.
- Serve with garlic butter on sourdough bread or rye bread.
- Yields 10 to 12 servings.
