Potato Chocolate Cake
- 3/4 c. shortening and margarine, mixed
- 2 c. sugar
- 2 c. flour
- 4 eggs
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. milk
- 2 c. walnuts, chopped
- 1 c. hot mashed potatoes
- 1 c. Hershey's cocoa, mixed with the flour
- 1 tsp. cinnamon
- 1/4 tsp. cloves
- 1 tsp. vanilla
- Cream shortening and margarine; add sugar gradually and beat until fluffy.
- Add eggs and beat until light.
- Add hot mashed potatoes and blend together.
- Sift flour; measure and add salt, baking powder, chocolate and spices.
- Sift again.
- Add dry ingredients alternating with milk and vanilla.
- Beat after each addition.
- Fold in nuts.
- Bake at 350u0b0 for 30 minutes for layers, 1 hour for loaf.
