Bacon & Cheese Stuffed Chicken
- 4 boneless, skinless chicken breast halves
- 4 slices fresh mozzarella cheese
- 4 slices bacon, crisp-cooked and crumbled
- 3 tablespoons i can't believe it's not butter! spread
- 1/2 cup italian seasoned dry bread crumbs
- 1 shallots
- 1 clove garlic finely chopped
- 1 package knorr parma rosa sauce mix
- 1 1/2 cups milk
- Season chicken, if desired, with salt and pepper. Evenly top chicken with cheese and bacon. Roll up and secure with wooden toothpick. Melt 1 tablespoon Spread, then dip chicken in Spread, then coat with bread crumbs.
- Melt 1 tablespoon Spread in 12-inch nonstick skillet over medium heat and brown chicken, turning occasionally. Remove chicken and keep warm.
- Melt remaining 1 tablespoon Spread and cook shallots, stirring occasionally, 3 minutes or until tender. Stir in garlic and cook 30 seconds. Stir in milk and Knorr(R) Parma Rosa sauce mix and bring to a boil, stirring occasionally. Return chicken to skillet. Reduce heat to low and simmer covered 15 minutes or until chicken is thoroughly cooked.
