Mango Sticky Rice
- 1 1/16 cups sticky rice or Thai sweet, available in Asian groceries
- 9/16 cup coconut milk
- 3 teaspoons granulated sugar
- salt
- 2 mangoes
- sesame seeds
- For this recipe to be successful, the rice must be soaked overnight in a bowl. It just needs to be covered by the water. On the next day, drain it and cook it.
- Put your rice into a microwave bowl, cover the rice with water.
- Cover and cook for 3 minutes in the microwave.
- Mix and cook covered for another 3 minutes.
- In a saucepan, gently heat the coconut milk, sugar, and 2 pinches of salt. Do not boil to avoid damaging the coconut milk.
- Pour 3/4 of the coconut milk over the hot rice, and wait for 5 minutes. The liquid will be absorbed by the rice and reinforce its "sticky" consistency.
- Cut the mango in chunks, sprinkle with sesame seeds, and serve with a glass containing the rest of the coconut milk.
