Indonesian Peanut Saute With Parmesean Crusted Chicken (Noodles&Co. Copycat Recipe)
- 3 chicken breasts
- olive oil
- 1/4 cup plain bread crumbs
- 1/2 cup grated Parmesan cheese
- lime juice Splash of
- soy sauce
- 16 ounces noodles linguine
- 1 1/2 cups carrots shoestring
- 1 orange pepper red & 1
- 2 broccoli florets chopped
- green onion
- bean sprouts
- peanuts
- peanut sauce
- For the chicken:nreheat skillet on medium high heat.nnIn a medium sized bowl, mix the bread crumbs, cheese, Italian seasoning, and garlic powder.nnPrep your chicken by lightly pounding each piece until fairly thin.nnCoat the chicken with the bread crumb mixture.nnAdd a little olive oil to the pan & add the chicken.nnAfter about 4min. flip the chicken to allow the other side to get crispy.nnCook for an additional 4-5 minutes or until chicken is cooked through.
- For the veggies:nombine a splash of lime juice, a splash of soy sauce, and a splash of olive oil in a pan.nnAdd vegetables and saute. (You may add a little more soy sauce as they cook)
- For the pasta:nook 16 oz. linguine in a pot until done. Drain.nnAdd vegetables to the mixture.
- Serve topped with peanuts, sesame seeds, and bean sprouts
