Veal Scallopini
- 1 1/2 lb. thin veal slices
- 1/4 c. salad oil
- 1 small clove garlic
- 3/4 c. thinly sliced onion
- 1/4 lb. mushrooms, sliced
- 2 Tbsp. all-purpose flour
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 c. water
- 1/2 c. white wine
- Cut meat into serving pieces.
- Heat oil in a large, heavy skillet.
- Drop in garlic; add meat and brown very well on both sides over medium heat.
- Remove meat and discard garlic.
- Cook onion and mushrooms in drippings until tender.
- Blend flour, salt and pepper into fat.
- Stir in water and wine gradually.
- Cook over medium heat, stirring constantly, until thickened.
- Place browned meat slices in gravy.
- Cover and cook over low heat for 30 minutes or until meat is tender.
- Makes 4 to 6 servings.
