After Eight Chocolate Cookies
- 3 1/2 ounces plain chocolate chopped
- 1 tablespoon butter
- 1 7/16 cups flour
- 2/3 cup sugar peppermint
- 2 tablespoons cocoa powder
- 3/4 teaspoon baking powder
- salt
- 2 eggs
- 2 tablespoons peppermint syrup
- In a pan, melt the chocolate with the butter and allow to cool. Set aside.
- In another bowl, mix the flour with the sugar, cocoa powder, baking powder, and a pinch of salt.
- Add the eggs, syrup and chocolate mixture to the flour mixture.
- Mix all the ingredients together, form into a smooth dough ball and wrap in plastic wrap and allow to rest in the refrigerator for 2 hours.
- Preheat the oven to 180 degrees Celsius.
- Shape into small balls place on a parchment paper-lined baking sheet.
- Bake for 10 minutes.
- Leave to cool completely before removing from the pan to avoiding breaking apart.
