Lobster Love(Serves 4)
- 2 lb. frozen lobster tails
- 2 Tbsp. butter
- 2 Tbsp. olive oil
- 2 Tbsp. minced onion
- 1/4 tsp. chervil
- 1/4 tsp. leaf thyme
- 1/4 c. bourbon
- 1/4 c. white wine
- 16 oz. canned tomatoes
- cayenne
- Thaw the lobster tails.
- With a knife, remove the shell from the lobster tail and cut lobster tail into 1-inch pieces.
- In a heavy saucepan, melt butter.
- Add olive oil and lobster meat; saute until the meat stiffens and turns white.
- Add onion, chervil and thyme; saute 3 more minutes.
- Add the bourbon and wine.
- Set the bourbon and wine aflame and let blaze for 20 seconds, then cover to put the flame out.
- Empty the can of tomatoes, saving the juice. Chop the tomatoes into coarse chunks.
- Add the tomatoes and juice to the pan; stir well.
- Simmer slowly for 5 more minutes.
- Add 3 dashes of cayenne.
- Stir and serve.
