Picadillo Soft Tacos
- 2 tablespoons Crisco Pure Vegetable Oil
- 1 cup chopped onion
- 1 cup green pepper chopped
- 2 cloves garlic minced
- 1 pound lean ground beef
- 2 tablespoons tomato paste
- 1 teaspoon ground cumin
- 3/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon pepper
- 2 Roma tomatoes peeled, seeded and chopped
- 1/2 cup pimiento stuffed green olives sliced
- 1/4 cup golden raisins
- 2 tablespoons flat leaf parsley chopped
- 6 flour tortillas 8-inch
- 1 cup manchego cheese shredded
- 1/2 cup sour cream
- HEAT oil in large skillet over medium heat. Add onion, green pepper and garlic; saute 5 minutes. Add crumbled ground beef; cook about 10 minutes or until thoroughly cooked and crumbled.
- STIR in tomato paste, cumin, salt, cinnamon and pepper; cook 5 minutes. Add tomatoes, olives, raisins and parsley; cook 5 minutes. Adjust seasonings if necessary.
- HEAT tortillas, one at a time, in large dry skillet over medium heat, turning once. Place tortillas on serving plates. Top evenly with beef mixture. Sprinkle with cheese. Garnish with sour cream. Fold tortilla to form taco.
