Salmon And Mushy Pea Cannelloni

  1. Preheat oven to 200 degrees celsius.
  2. Stir the raw salmon fillets to break into pieces.
  3. In a bowl, mix the mushy peas, salmon, mascarpone, Espelette pepper, salt, and pepper.
  4. Fill a pastry bag with this mixture and stuff the cannelloni.
  5. Put a little olive oil in a baking dish and place the cannelloni in it.
  6. Pour a generous amount of tomato coulis on top.
  7. Sprinkle with the mozzarella cheese.
  8. Bake for 40 minutes.
