Zucchini And Halloumi Fritters

  1. Place the grated zucchini in a colander, sprinkle with salt and leave for 30 mins.
  2. Squeeze out the excess moisture and pat dry with paper towels.
  3. Place the zucchini, shallots, mint, parsley, halloumi and eggs in a bowl and mix to combine. Sift in the flour, mix, and season to taste.
  4. Heat oil in a large, non-stick frying pan over a medium heat. When hot, add tablespoons of the zucchini mixture.
  5. Flatten the fritters slightly in the pan and cook for 2-3 mins each side or until golden brown. Transfer to paper towels and repeat with remaining batter.
  6. To serve, arrange the fritters on a serving plate with lemon wedges on the side.
