Zucchini And Halloumi Fritters
- 14 ounces zucchini about 4 medium-sized, grated
- 1 teaspoon salt
- 4 shallots peeled and sliced
- 2 tablespoons mint chopped
- 1 tablespoon parsley chopped
- 4 1/2 ounces halloumi cheese grated
- 2 large eggs lightly beaten
- 1/3 cup rice flour
- olive oil to pan fry
- lemon wedges to serve
- Place the grated zucchini in a colander, sprinkle with salt and leave for 30 mins.
- Squeeze out the excess moisture and pat dry with paper towels.
- Place the zucchini, shallots, mint, parsley, halloumi and eggs in a bowl and mix to combine. Sift in the flour, mix, and season to taste.
- Heat oil in a large, non-stick frying pan over a medium heat. When hot, add tablespoons of the zucchini mixture.
- Flatten the fritters slightly in the pan and cook for 2-3 mins each side or until golden brown. Transfer to paper towels and repeat with remaining batter.
- To serve, arrange the fritters on a serving plate with lemon wedges on the side.
