Salmon Quinoa With Coriander Pesto Appetizer
- 3/4 pound salmon
- 3 1/4 tablespoons Parmesan cheese
- 1 bunch coriander
- 1 lime
- 1 lemon
- 3 tablespoons olive oil
- 1 fennel
- salt
- ground black pepper
- cooked quinoa
- Cut the salmon in small cubes in a bowl, squeeze on lime juice, and a little salt and pepper. Refrigerate.
- In the bowl of a mixer, put the coriander, 2 tablespoons of olive oil, salt, and a piece of cheese. Mix.
- After washing the fennel, cut it into small cubes and set aside.
- In a bowl, dress the quinoa with salt, lemon juice, and 1 tablespoon of olive oil.
- Add a 1 tablespoon of quinoa to a glass, press it with the back of a spoon. Do the same with the coriander pesto, fennel, and salmon.
- Store in the refrigerator.
