Tomato Bread(Pretty Pink Bread - A Meat And Cheese Sandwich Special)

  1. Heat tomato juice and butter together until butter is melted. Add sugar, salt and ketchup.
  2. Let cool to lukewarm.
  3. Sprinkle yeast on warm water; stir to dissolve.
  4. Add tomato mixture and 3 cups flour to yeast.
  5. Beat with electric mixer at medium speed, scraping the bowl occasionally, 2 minutes.
  6. Or beat by hand until smooth.
  7. Mix in enough remaining flour, a little at a time, first with spoon and then with hands, to make a soft dough that leaves the sides of bowl.
  8. Turn onto lightly floured board and knead until smooth and elastic, 8 to 10 minutes.
  9. Place in lightly greased bowl; turn dough over to grease top.
  10. Cover and let rise in warm place until doubled, 1 to 1 1/2 hours.
  11. Punch down and divide in half.
  12. Cover and let rest 10 minutes.
  13. Shape into loaves and place in greased 9 x 5 x 3-inch loaf pans.
  14. Cover and let rise until almost doubled, about 1 hour.
