Red Cabbage
- 1 onion, cut into quarters
- 2 Tbsp. butter
- 2 tart apples, pared, cored and cut into halves
- 2 lb. red cabbage, cored and cut into wedges
- 1/4 c. cider vinegar
- 1/4 c. sugar
- 1/2 c. water or chicken stock
- 1 tsp. salt
- 1/4 tsp. ground nutmeg
- pinch of ground cloves
- 2 Tbsp. red wine
- 2 Tbsp. currant jelly
- Using steel blade, process onion, using on/off technique until chopped.
- Saute in butter in large saucepan until soft, 5 minutes. Using slicing disc, slice apples.
- Add apples to saucepan; cook 5 minutes.
- Using slicing disc, slice cabbage.
- Stir sliced cabbage, vinegar, sugar, water, salt, nutmeg and cloves into saucepan. Heat to boiling.
- Reduce heat.
- Simmer, covered, until cabbage is tender, about 1 hour.
