Turkey, Spinach And Swiss Quiche
- 1/2 package Honeysuckle White Turkey Breast Tenderloins or approximately 1.25 lbs leftover whole turkey
- 4 tablespoons olive oil
- 1/2 white onion diced
- 1/2 red bell pepper diced
- 2 cloves garlic minced
- 10 ounces frozen spinach thawed and well-drained
- 3 eggs
- 1/2 cup low fat milk
- 1/2 teaspoon salt
- 1/4 teaspoon coarse ground black pepper
- 1 cup swiss cheese grated
- 1 pie crust 9-inch, unbaked
- Preheat oven to 350u0b0F.
- Heat 2 tablespoons olive oil in a skillet.
- Saute turkey for 10 minutes on each side, or until center is no longer pink. Cool. Transfer to cutting board and slice with the grain of turkey into bite-size pieces.
- Saute onion, pepper and garlic over medium heat until tender, about 3 minutes.
- Add turkey and thawed spinach (squeeze out moisture) and saute 1 minute. Remove from heat.
- In a mixing bowl, combine eggs, milk, salt and pepper, and beat well.
- Add spinach, cheese and mix.
- Pour into unbaked pie shell.
- Bake for approximately 50 minutes, or until center is set.
