Dirty Rice With Sausage
- 1 pound ground pork I used the spicy pork
- 1 tablespoon canola oil
- 1 yellow onion medium, finely chopped
- 1/2 green bell pepper large, finely chopped
- 1/2 yellow bell pepper or large red, finely chopped
- 1 stalk celery finely chopped
- 2 cloves garlic minced
- 1 tablespoon seasoning Cajun spice, see my post on how to make your own
- 1 teaspoon ground black pepper
- 2 cups chicken stock
- salt to taste
- Cook rice according to directions on package. Set aside to cool.
- In a large cast-iron or heavy skillet heat oil over medium-hight heat. Add ground pork and cook until the meat is brown (about 6 - 8 minutes). Stir often. Stir in the onion, bell peppers, celery, garlic, cajun seasoning and pepper. Cook, stirring often, until onions are translucent (about 5 minutes). Stir in the stock making sure to scrap the bottom of the pan to loosen any brown bits. Bring mixture to a boil, then lower heat and allow to simmer for 5 minutes. Stir in the rice and continue to cook until the rice is heated. Remove rom heat. Salt to taste. Serve hot.
