Sausage, Pea And Feta Couscous
- 1 tablespoon vegetable oil
- 1 pound lamb sausages thin
- 1 red onion large, thinly sliced
- 2 teaspoons paprika
- 14 ounces chopped tomatoes
- 5 ounces frozen peas thawed
- 1/3 cup couscous
- 2 tablespoons flat leaf parsley chopped
- 3 1/2 ounces feta crumbled
- crusty bread to serve
- mixed greens to serve
- Heat half the oil in a large frying pan over moderately high heat. Add sausages; cook and turn for 4-5 mins or until browned. Transfer to a chopping board; Cut into 1/2 inch-thick slices.
- Return pan to moderate heat. Add remaining oil and onion; cook and stir for 4-5 mins or until soft. Add paprika. Return sausages to pan; cook and stir for 5 mins or until sausages are cooked.
- Add tomato and peas; simmer, uncovered, for 3-4 mins. Add couscous and 1/2 cup boiling water. Remove from heat. Cover pan and set aside for 5 mins or until liquid is absorbed.
- Using a fork, fluff and separate grains. Sprinkle with parsley and feta. Serve with bread and salad.
