Barbacoa & Eggs (Single Serving - Low Carb)
- 1/2 tbsp. avocado oil
- 2 tbsp. finely chopped red or white onion
- 1/2 cup Barbacoa (http://whitneybond.com/2015/01/13/slow-cooked-beef-barbacoa/)
- 1/2 jalapeno peppers, chopped
- 1/4 cup medium tomatoes, chopped
- 1 tbsp. water
- 1 clove garlic, peeled and finely chopped
- 1 tbsp. cilantro, chopped
- 1 large egg
- 3 tbsp. liquid egg whites
- 2 tbsp. fat-free half and half
- Heat oil in heavy frying pan over medium-high heat
- Add onion and saute for 30 seconds
- Add Barbacoa beef, stir well and cook for 1 minute more
- Add jalapenos and tomatoes, cook for 1 minute
- Add water, cover and cook for 1-2 minutes, shaking pan occasionally to prevent sticking
- Lightly beat the eggs, egg whites and half and half together
- Stir in the egg mixture, garlic and cilantro.
- Add salt and pepper to taste and cook until the eggs are set.
