Barbacoa & Eggs (Single Serving - Low Carb)

  1. Heat oil in heavy frying pan over medium-high heat
  2. Add onion and saute for 30 seconds
  3. Add Barbacoa beef, stir well and cook for 1 minute more
  4. Add jalapenos and tomatoes, cook for 1 minute
  5. Add water, cover and cook for 1-2 minutes, shaking pan occasionally to prevent sticking
  6. Lightly beat the eggs, egg whites and half and half together
  7. Stir in the egg mixture, garlic and cilantro.
  8. Add salt and pepper to taste and cook until the eggs are set.
