Chocolate Chip And Orange Cake
- 9 tablespoons softened butter
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup self-raising flour sifted
- 7 ounces dark chocolate finely chopped
- 1/3 cup milk
- 1 zest
- 1/3 cup juice
- icing
- 11 tablespoons softened butter
- 2 1/2 cups powdered sugar sifted
- 1 tablespoon milk
- grated orange zest to decorate
- Preheat oven to 350u0b0F. Lightly grease and line a 4 x 8 inch loaf pan with baking paper.
- In a medium bowl, using an electric mixer, beat butter, sugar and vanilla together, until pale and creamy. Add eggs, one at a time, beating well after each addition. Divide into 2 bowls.
- Fold 3/4 of flour and chocolate into one bowl, alternately with milk. Fold remaining flour into second bowl with orange juice and zest. Spoon the two mixtures alternately into pan.
- Bake 40-45 minutes, until cooked when tested. Cool in pan 5 minutes, before turning onto a wire rack to cool completely.
- To make icing, in a bowl, beat butter until pale using an electric mixer. Gradually beat in powdered sugar then enough milk to make a spreadable consistency. Spread icing over cold loaf. Sprinkle with zest and serve sliced.
