Indian Beef And Green Bean Curry
- 2 tablespoons mild curry paste
- 1 teaspoon mustard seeds
- 1 pound ground beef
- 13 1/2 ounces diced tomatoes
- 7 ounces green beans trimmed, halved

- 4 pappadums
- 2 carrots grated
- 1 Orange peeled, cut into 3/4 inch slices
- 1 bunch fresh mint leaves picked
- 1 tablespoon currants
- cooked rice to serve
- Combine curry paste and mustard seeds in a large frying pan. Cook over medium heat, stirring, for 1 min, until fragrant. Add ground beef and brown for 2-3 mins. Add tomatoes and green beans. Bring to a boil then reduce heat and simmer for 2-3 mins.
- Meanwhile, to make the salad, arrange pappadums in single layer on a serving plate. Microwave on HIGH (100% power) for 40 seconds-1 min, until puffed and golden. In a medium bowl, toss together carrots, orange, mint and currants. Crumble pappadums over top when ready to serve.
- Serve curry with salad and rice.
