Prosciutto And Blue Cheese Crostini
- 24 slices French bread baguette 1/4-inch thick
- 2 tablespoons extra virgin olive oil
- salt
- pepper
- 4 ounces cream cheese softened
- 1/3 cup crumbled blue cheese
- 1/3 cup Smucker's(R) Apricot Preserves at room temperature
- 1 teaspoon white balsamic vinegar
- 3 ounces proscuitto ham very thinly sliced
- 1 teaspoon fresh thyme leaves
- HEAT oven to 400u0b0F. Place bread slices on baking sheet in single layer. Brush top side of slices with oil. Sprinkle generously with salt and pepper.
- BAKE 7 to 10 minutes or until lightly toasted. Cool on baking sheet.
- STIR cream cheese and blue cheese in small bowl until blended. Spread on crostini.
- TEAR prosciutto into small strips. Arrange on top of cheese spread. Stir preserves and vinegar in small bowl until blended. Top each crostini with about 1/2 teaspoon preserves mixture. Sprinkle with thyme.
