Macademia Nut Crusted Fish

  1. Finely chop or crush the macademia nuts or cashews. In a medium sized bowl, mix the nuts, lemon zest, nutritional yeast flakes, egg and lemon juice.
  2. Coat 3 sides of the fish in the nut crumb. Do not coat the side which will be flat against the parchment paper/tray.
  3. Brush a parchment lined tray with the oil and gently position the fish in the tray. Cook in the oven at 180 degrees for 12-15 minutes, until the crust has browned and the fish is cooked.
  4. Serve with spinach and grated zucchini salad dressed in flaxseed dressing.
