Macademia Nut Crusted Fish
- 4 fillets of meaty white fish such as blue grenadier, monk fish or hake
- 100g natural macadamia nuts or cashews
- Zest of 1 organic lemon (or remove the wax by dipping in boiling water)
- 1/2 lemon, juiced
- 1 small egg, beaten
- 1 tbsp nutritional yeast flakes
- Olive oil for the cooking tray
- Finely chop or crush the macademia nuts or cashews. In a medium sized bowl, mix the nuts, lemon zest, nutritional yeast flakes, egg and lemon juice.
- Coat 3 sides of the fish in the nut crumb. Do not coat the side which will be flat against the parchment paper/tray.
- Brush a parchment lined tray with the oil and gently position the fish in the tray. Cook in the oven at 180 degrees for 12-15 minutes, until the crust has browned and the fish is cooked.
- Serve with spinach and grated zucchini salad dressed in flaxseed dressing.
