Nigella Lawson'S Chocolate Pavlova With Exotic Fruit

  1. Preheat oven to 180 degrees Celsius.
  2. With an electric mixer, beat the egg whites until soft peaks form.
  3. Gradually add sugar and keep beating until glossy.
  4. Add cocoa and vinegar and whisk quickly to incorporate the cocoa.
  5. Line a baking sheet with parchment paper, oil it and place the meringue in the middle.
  6. With a spatula make a well at the center of the meringue.
  7. Lower the oven temperature to 130 C and bake for 1 hour to 1 hour 15 minutes.
  8. Remove from the oven and wait for about 10 minutes before placing it on the serving dish.
  9. 30 minutes before serving, whip the cream until stiff, adding the confectioner's sugar.
  10. Place the cream in the center of the meringue, letting it overflow a bit on the sides.
  11. Cut the kiwi, and mango, and seed the pomegranate.
  12. Decorate the pavlova, with the fruit and sprinkle with chocolate shavings.
