Rye Buns With Walnuts
- 7/8 tablespoon fresh yeast
- 25 ounces warm water
- 3 1/4 cups white flour
- 1 cup rye flour
- 2 1/2 tablespoons powdered milk
- 2 tablespoons sugar
- 5 1/4 tablespoons butter melted
- 1 1/2 cups sourdough starter liquid
- 1 1/4 cups walnuts
- In a bowl, dissolve yeast in 10 centiliters of warm water, and let stand for 20 minutes.
- Pour the flours, powdered milk, sugar, melted butter, and salt Into the food processor bowl,
- Add the sourdough starter and yeast mixture.
- Mix for 10 minutes.
- Cover for 30 minutes.
- Place the dough on a work surface, add the nuts, and knead to mix them in the dough.
- Put the dough in a bowl and let it rise for 40 minutes.
- Divide the dough into 10 equal pieces.
- Make them even.
- Place them in small boxes or on a silicone cloth.
- Slit with a blade.
- Cover with a damp cloth and let rise for one hour.
- Preheat oven to 240 degrees Celsius.
- Bake for 15 minutes.
