Chicken Broccoli Caserole
- 1 pound frozen broccoli
- 1 onion medium
- 2 tablespoons coconut oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 16 ounces mushroom
- 3 pounds boneless, skinless chicken thigh
- 1 cup coconut milk
- 2 eggs
- Preheat oven to 350 degrees F. Grease casserole pan with half the coconut oil
- steam broccoli. Cook and shred chicken
- In sauce pan saute onions and mushrooms in coconut oil until onions are translucent and mushrooms are brown.
- Transfer broccoli, onions and mushrooms, and shredded chicken to caserole dish and mix well.
- Mix fat from chicken thighs with coconut milk, eggs, and salt and pepper and pour into casserole pan.
- Bake casserole for 35 to 40 minutes. Let cool for 5-10 minutes before serving.
