Healthy Pasta
- 2 cups mushrooms 8- 9 medium Button Mushrooms
- linguine pasta Wheat
- 1 white onion small
- 1 broccoli Medium, cut into bite-size pieces
- 5 asparagus
- 5 cloves garlic I love Garlic but you can reduce the quantity if you are
- 1 cup corn
- 1/2 cup Parmesan
- 1/2 juice Lemon
- 1 teaspoon lemon zest
- basil to garnish
- olive oil
- salt to taste
- Cook the Pasta in water with Olive oil and lots of salt; this way the Pasta is seasoned well.
- Cook the Pasta Al Dente as it cooks further in the sauce. Drain the Pasta and keep it aside.
- Do not throw away the salty pasta water; that's is the magic ingredient in this dish.
- In a pan heat some Olive oil and add Garlic and Onions to it; saute till the Onions turn translucent.
- Don't turn the Onions brown. They should be caramelized.
- Add all the veggies and toss them.
- Squeeze juice of 1/2 Lemon into the the veggies and toss them again.
- Add a cup of the remaining pasta water.
- Add the pasta and toss the mixture on medium flame.
- Cook till the pasta water is incorporated in the pasta and veggies.
