Bitter Gourd Boiled With Pork Ribs (Ma-Ra Tom Ka-Dook Mou)
- 1 bitter gourd
- 200 grams pork ribs
- 1 teaspoon greens chopped coriander
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 2 cups water
- Wash the gourd, cut in half length wise, remove and discard the seeds, and cut the flesh into 1" x 2" pieces.
- Boil the bones in the water, skimming off the scum as it forms. After a while, add the bitter gourd and fish sauce, and put the lid on the pot. Do not stir.
- Continue cooking until the gourd is well done, and then turn off the heat.
- Sprinkle with the coriander greens and serve hot.
- Bitter gourd is often used in Chinese cooking for its bitter flavor, typically in stir-fries with pork or eggs, soup and even blended into juices with apples, carrots or other fruits. Bitter Gourds (Bitter Melons) are very low in calories. It is an excellent source of vitamins and has high dietary fiber.
