Zucchini Relish

  1. Put first three ingredients in a large bowl and mix well.
  2. Let stand overnight.
  3. Drain and rinse in cold water.
  4. Drain well again and put in large kettle (pot) with the remaining ingredients. Bring to a boil and simmer, uncovered, stirring occasionally, for 30 minutes or until desired consistency.
  5. Pour into hot, sterilized jars and seal.
  6. Process 5 minutes.
  7. Makes 6 or 7 pints.
