Zucchini Relish
- 10 c. ground or shredded zucchini
- 4 c. chopped onions
- 5 Tbsp. salt
- 2 1/4 c. white vinegar
- 4 1/2 c. sugar
- 1 Tbsp. nutmeg
- 1 tbsp. dry mustard
- 1 Tbsp. turmeric
- 1 Tbsp. cornstarch
- 1/2 tsp. pepper
- 2 tsp. celery salt
- 1 sweet green pepper, chopped fine
- 1 sweet red bell pepper, chopped fine
- Put first three ingredients in a large bowl and mix well.
- Let stand overnight.
- Drain and rinse in cold water.
- Drain well again and put in large kettle (pot) with the remaining ingredients. Bring to a boil and simmer, uncovered, stirring occasionally, for 30 minutes or until desired consistency.
- Pour into hot, sterilized jars and seal.
- Process 5 minutes.
- Makes 6 or 7 pints.
