Chicken Pesto Calzones
- 2 1/4 cups all-purpose flour sifted
- 1 3/4 teaspoons active dry yeast
- 1 tablespoon olive oil
- 5 1/4 ounces chicken shredded
- 4 ounces mozzarella cheese grated
- 3/4 cup pesto store-bought
- 2 tablespoons pine nuts
- 1 egg lightly beaten
- mixed greens to serve
- Combine flour with 1 tsp sugar, 1 tsp salt and yeast. Combine 1 cup warm water with 1/2 tbsp oil then mix into dry ingredients with a wooden spoon until dough becomes too firm to stir. Work dough into a ball then turn out onto a lightly floured surface and knead for 3-4 mins, until smooth and elastic.
- Brush a large bowl with remaining oil. Place dough in bowl, turning to grease all over. Cover with plastic wrap and a clean tea towel. Set aside in a warm place for 1 hour, until doubled in size.
- Preheat oven to 400u0b0F. Lightly grease a pizza or baking tray.
- Divide dough into 4 equal portions then shape each portion into an 8 inch disc. Combine chicken, cheese, pesto and pine nuts then distribute over pizza bases, leaving a 1/3 inch border. Brush edge with egg then fold dough over filling, pinching edges to seal. Transfer to prepared pan, brush tops with egg and bake for 20-25 mins, until golden brown.
- Serve with mixed greens.
