Polenta Chips
- 1 cup polenta
- 3 cups water
- 2 tablespoons nutritional yeast
- 1 tablespoon smoked paprika
- 1 tablespoon oregano
- olive oil
- In a large pot add the water and bring to the boil. Throw in the oregano, smoked paprika and nutritional yeast then start to pour in the polenta in a steady stream whisking continuously until all the polenta has been added. Keep whisking until the mixture thickens and firms to a consistency that doesn't sink back to the bottom of the pot when you stop whisking.
- Line an oven tray with clingfilm and spread the mixture as flat as you can with the back of a spoon then leave to cool and firm for about 30 minutes.
- Once cooled cut the polenta into chip shapes and lay each chip on an oven tray drizzled with oil, make sure they aren't touching then add a little more oil on top and bake for 35/40 minutes at 200u0b0
