Polenta Chips

  1. In a large pot add the water and bring to the boil. Throw in the oregano, smoked paprika and nutritional yeast then start to pour in the polenta in a steady stream whisking continuously until all the polenta has been added. Keep whisking until the mixture thickens and firms to a consistency that doesn't sink back to the bottom of the pot when you stop whisking.
  2. Line an oven tray with clingfilm and spread the mixture as flat as you can with the back of a spoon then leave to cool and firm for about 30 minutes.
  3. Once cooled cut the polenta into chip shapes and lay each chip on an oven tray drizzled with oil, make sure they aren't touching then add a little more oil on top and bake for 35/40 minutes at 200u0b0
