Potato Croquettes With Mozzarella
- 2 1/4 pounds potatoes
- 1 egg
- 1 1/8 cups mozzarella
- 1 tablespoon flour
- 4 tablespoons breadcrumbs
- 4 pieces dried tomatoes
- 1 pinch turmeric
- olive oil
- salt
- pepper
- Cook the potatoes in salted water with their skin for 20 minutes.
- Drain, peel the skin and mash the potatoes.
- In a bowl, mix mashed potatoes, the egg and flour.
- Add turmeric, salt and pepper.
- Mix and let cool.
- Cut the mozzarella and dried tomatoes into small pieces.
- Stir into the cold mashed potatoes.
- Shape into round neat patties.
- Coat each patties with bread crumb mixture.
- Heat the griddle and put some oil on.
- Fry them until they are crispy,and then arrange them on a plate covered with paper towels.
