Potato Croquettes With Mozzarella

  1. Cook the potatoes in salted water with their skin for 20 minutes.
  2. Drain, peel the skin and mash the potatoes.
  3. In a bowl, mix mashed potatoes, the egg and flour.
  4. Add turmeric, salt and pepper.
  5. Mix and let cool.
  6. Cut the mozzarella and dried tomatoes into small pieces.
  7. Stir into the cold mashed potatoes.
  8. Shape into round neat patties.
  9. Coat each patties with bread crumb mixture.
  10. Heat the griddle and put some oil on.
  11. Fry them until they are crispy,and then arrange them on a plate covered with paper towels.
