Chicken & Mushroom Canapes
- 1 chicken breast or 10 oz canned chicken breast
- 12 ounces mushrooms
- 1 1/2 tablespoons butter 1/2 Tbsp if using canned chicken
- 1 1/3 shredded cheese I used four cheese or mix with mozzarella
- 1/2 cup mayo depends how large your chicken was
- 2 tablespoons dill
- 1 baguette loaf
- Cut the chicken breast into small pieces (as small as you can get them). Place into a hot pan on med/high heat. Cook about 5 minutes or until pan is dry. Add 1 Tbsp butter, salt and pepper to taste. (If you have a fav seasoning add it as well). Cook on medium heat for another 5 minutes. (I don't like my chicken very large so once it's done cooking I chop it into smaller pieces, personal preference though.) If using canned chicken just drain water.
- Slice the mushrooms into small pieces. Fry until pan is dry and add 1/2 Tbsp butter and lightly salt/pepper. Cook another 1 minute.
- Add chicken to bowl, add mushrooms. Let cool completely. Then add chopped dill, mayo and cheese.
- Slice the baguette into 20-24 pieces.
- Distribute the chicken mixture onto the baguette slices.
- Bake in a preheated oven to 350u0b0 for 12-15 minutes.
