Pasta With Portobello Mushrooms
- 7/8 pound pasta fettuccini, or other similar pasta
- 1 onion diced
- 2 cloves garlic minced
- 7/8 cup half and half
- 7/8 pound portabella mushrooms sliced
- 2 tablespoons olive oil
- 1 tablespoon bouillon
- 2 tablespoons butter
- Heat a tbsp. of olive oil in a pan on medium heat. Wait one minute and then saute the onion and garlic, cook for 3 minutes.
- Add the sliced mushrooms.
- Lower the heat to low and cover the pan. Cook for 5 minutes, allowing the mushrooms to release their juices.
- Meanwhile, cook the pasta al dente in water with salt and drain.
- Add the half and half, bouillon, salt and pepper to the pan with the mushrooms. Mix and leave on low heat for 4 more minutes to blend the flavors. Remove from heat and add the pasta to the pan.
- Add the butter, stir and serve immediately.
- If desired, sprinkle each plate with shaved parmesan.
