Raw Buckwheat Almond Porridge
- 12 cups raw buckwheat groats + water for soaking
- 1 banana
- 8 cups almonds + hot water for soaking
- 4 cups almond milk or milk of your choice
- 2 tablespoons coconut flakes unsweetened
- 2 persimmons
- 2 tablespoons goji berries dried
- 1 tablespoon coconut flakes unsweetened
- Place buckwheat groats and almonds in two separate bowls. Cover with water and let soak for at least 1 hour or overnight.
- Rinse well and place togheter with all remaining ingredients (except coconut flakes) in a food processor and blend until smooth. Add coconut flakes and been for a few seconds.
- Topp with persimmons, goji berries and some extra coconut flakes. Instead of persimmons this buckwheat porridge would taste great with some raspberries, or fresh peaches in the summer. Use what you have at home or in season.
