Spicy Prawn Soup

  1. Heat a large saucepan over medium heat. Saute curry paste and pepper for 2-3 mins, until aromatic. Add coconut milk and stock. Bring to a boil then reduce heat and simmer for 5 mins. Add prawns and snow peas and cook for 3 mins.
  2. Meanwhile, place vermicelli in a heatproof bowl and cover with boiling water. Set aside for 5 mins then drain and cut into pieces. Distribute between serving bowls.
  3. Ladle soup over noodles. Top with cilantro and serve with lime wedges.
