Mexican-Style Prawns
- 24 prawns very large king
- 1 onion large, chopped
- 3 cloves garlic chopped
- 2 red chili peppers large
- 1/2 lemon
- 1 can chopped tomatoes
- 1 bunch coriander chopped
- olive oil
- black pepper
- salt
- Peel the prawns carefully, leaving the head and tail intact.
- Devein the prawn by removing the black intestinal tract.
- Open the chilies and remove the seeds; chop and set aside.
- Heat a drizzle of oil in a heavy based frying pan, add the onion and cook until soft.
- Add the garlic and chillies.
- Stir well and add the prawns. Squeeze the lemon juice over the prawns and stir again.
- Pour in the tomato. Season and leave to cook on low until the sauce thickens.
- Sprinkle with coriander and serve.
- May be served as a starter, or a main meal with rice or pasta.
