Mexican-Style Prawns

  1. Peel the prawns carefully, leaving the head and tail intact.
  2. Devein the prawn by removing the black intestinal tract.
  3. Open the chilies and remove the seeds; chop and set aside.
  4. Heat a drizzle of oil in a heavy based frying pan, add the onion and cook until soft.
  5. Add the garlic and chillies.
  6. Stir well and add the prawns. Squeeze the lemon juice over the prawns and stir again.
  7. Pour in the tomato. Season and leave to cook on low until the sauce thickens.
  8. Sprinkle with coriander and serve.
  9. May be served as a starter, or a main meal with rice or pasta.
