Super Moist Blueberry Muffins
- 1/2 cup butter softened
- 1 1/4 cups white sugar
- 2 eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup milk
- 1/4 cup unsweetened applesauce
- 1/2 cup fresh blueberries
- 2 cups blueberries fresh or frozen
- 1/4 cup white sugar regular or coarse, for sprinkling on top
- Preheat oven to 350 F. Grease muffin pans or use paper liners.
- In a large bowl, cream butter and 1 1/4 cup sugar with an electric mixer until light and fluffy. Add eggs one at a time and mix in.
- Mix flour, baking powder and salt. Add flour mixture to wet mixture, alternating with milk. Mix in applesauce.
- Mash 1/2 cup berries and stir into batter. Fold in remaining berries.
- Fill muffin cups and sprinkle with the 1/4 cup of sugar. Bake for 25 minutes or until the tops just start to turn golden.
