Angel-Strawberry Bavarian
- 1 small angel food cake (9 oz.)
- 1 (10 oz.) pkg. sweetened, frozen, sliced strawberries, thawed
- 1 (3 oz.) box strawberry jello
- 1 c. boiling water
- 2 1/2 c. whipping cream, chilled and divided
- 2 1/2 Tbsp. confectioners sugar
- 3/4 tsp. vanilla
- 4 fresh strawberries for garnish
- Cut cake into 1-inch cubes.
- In small bowl, combine jello and boiling water.
- Stir until dissolved.
- Drain strawberries, reserving juice.
- Add enough water to strawberry juice to make 1 cup.
- Stir in jello.
- Refrigerate until jello is slightly thickened.
- Beat jello until foamy.
- Fold one cup whipping cream into jello along with strawberries.
- Alternate layer of cake cubes and strawberry mixture in 10-inch tube pan.
- Unmold cake onto serving plate.
- Mix together 1 1/2 cups whipping cream, confectioners sugar and vanilla.
- Frost sides and top of cake. Refrigerate until ready to serve.
- Garnish with strawberries.
