Chicken Nuggets
- 1 1/2 pounds boneless skinless chicken thighs chopped
- 1 onion small, chopped
- 1 egg
- 1/3 cup breadcrumbs stale white
- 1/2 cup dried breadcrumbs
- 2 teaspoons seasoned salt
- vegetable oil for deep-frying
- 1/3 cup tomato sauce
- 2 tablespoons barbecue sauce
- 1 tablespoon sugar
- 1 tablespoon malt vinegar or cider vinegar
- salad Green, to serve
- potato wedges to serve, optional
- Place chicken, onion, egg and stale breadcrumbs in a food processor and process until combined. Shape level tablespoon of mixture into patties.
- Mix dried breadcrumbs and seasoned salt on a large plate. Roll chicken nuggets in mixture to coat well.
- Pour oil to a depth of 2 inches in a large saucepan. Heat on medium-high heat (oil is ready when a cube of bread crisps quickly without absorbing oil). Cook nuggets, in batches, until tender and browned. Remove with a slotted spoon and drain on paper towels.
- Mix tomato sauce, barbecue sauce, sugar and vinegar in a bowl. Serve warm nuggets with sauce, green salad and potato wedges, if desired.
