Beef-N-Tortilla Casserole
- 1 lb. ground beef
- 1 medium onion, chopped
- 1/2 green pepper, chopped
- 1 tsp. garlic powder
- 1 tsp. ground cumin
- salt and pepper to taste
- 1 (8 oz.) can tomato sauce
- 1 (10 1/2 oz.) can cream of chicken soup
- 1 (10 1/2 oz.) can cream of mushroom soup
- 8 corn tortillas
- 6 slices Velveeta cheese
- Brown beef in a heavy skillet.
- Add onions, green peppers and seasonings; saute about 5 minutes.
- Add tomato sauce and soups. Cook an additional 5 minutes over low heat.
- Line bottom of buttered 9 x 11-inch glass baking dish with 4 tortillas, torn in half.
- Cover with 1/2 of meat mixture.
- Cover with remaining tortillas, torn in half and cover with the other half of meat mixture.
- Cover all with cheese slices.
- Bake at 350u0b0 for 25 to 30 minutes.
- Serves 4 or 5.
