Spicy Seafood Pasta
- 1/2 stick unsalted butter
- 1/4 cup diced onion
- 1/8 cup red bell pepper diced
- 1/8 cup green pepper diced
- 12 ounces hot sausage Italian, diced
- 1 teaspoon cayenne powder
- 2 tablespoons Tabasco Sauce
- 1/4 cup cajun seasoning
- 1 tablespoon worcestershire sauce
- 4 cups fresh tomatoes crushed
- 1/4 cup tomato paste
- 2 tablespoons dry red wine
- 1 cup unsalted butter
- 8 ounces white fish your favorite, I use orange roughy
- shrimp 8 ounces med. raw, peeled, deveined
- 8 ounces bay scallops cleaned
- 8 ounces shucked oysters fresh, or mussels
- 6 tablespoons dry white wine
- 2 pounds fettuccine cooked, depending on the sauce to <
- 1/2 cup heavy whipping cream
- 1 1/2 cups sauce spicy
- grated Parmesan cheese
- Saute the onions, peppers and sausage in butter. Add remaining ingredients and simmer for 10 minutes.
- Saute the first 4 ingredients in the butter and wine for about 4 minutes. Add fettuccine and cream and simmer another 4 minutes. Add 1 1/2 cups (or more if necessary) of the spicy sauce and simmer until well thickened. Top with the cheese and serve with tossed green salad.
