Spiced Mole Meatballs With Rice
- 1 tablespoon olive oil
- 2 onions finely chopped
- 2 cloves garlic finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cinnamon
- 1/2 teaspoon dried oregano
- 28 ounces tomato puree
- 14 ounces diced tomatoes
- 2 tablespoons chocolate 85% cocoa, grated
- 1/2 pound ground pork
- 1/2 pound ground beef
- 2 ounces breadcrumbs
- 1 tablespoon cilantro leaves chopped, plus extra to serve
- cooked rice to serve
- Heat oil in a large saucepan over medium heat. Saute onion, garlic, cumin and coriander 3-4 mins, until onion is tender. Transfer half onion mixture to a large bowl to cool. Add cinnamon to remaining onion mixture in pan. Stir over low heat 1 min, until fragrant. Mix in tomato puree, diced tomatoes and chocolate. Bring to a boil. Simmer 6-8 mins.
- Meanwhile, add meat to cooled onion mixture, along with breadcrumbs and chopped cilantro. Season to taste and mix well. Roll tablespoons of the mixture into balls and add to simmering sauce. Simmer 12-15 mins, until cooked through. Serve meatballs with rice and extra cilantro.
