Brined ~ Roast Curry Chicken
- 7 pounds chicken
- whole cloves Sprinkle of
- all-spice Sprinkle of whole
- 2 bay leaves
- celery Dashes of ground
- curry Dashes of ground
- 1 dash cinnamon
- 1 tablespoon brown sugar
- 1/2 juice lemon
- 2 tablespoons vinegar
- 2 cloves garlic - halved
- 1/2 cup salt
- 2 tablespoons honey
- 1 tablespoon rice wine vinegar
- 1 dash sea salt
- 1 dash fresh ground black pepper
- 1 tablespoon curry ground
- 1 teaspoon cinnamon
- Clean chicken thoroughly.
- Fill a large saucepot half-way with water and add all of the ingredients for the brine.
- Place the clean chicken in the water, cover and refrigerate for at least 2 hours.
- The chicken may remain in the brine as long as overnight.
