Minestrone Soup(Italian)
- 1 small onion, minced
- 1 clove garlic, minced
- 2 Tbsp. olive or salad oil
- 1 c. chopped tomatoes
- 5 beef bouillon cubes
- 3/4 c. diced celery
- 1 c. chopped cabbage
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 lb. can white or red kidney beans (plain water packed)
- 1 c. cooked shells (small)
- 1/4 c. Parmesan grated cheese
- Saute the onion and garlic in oil until soft.
- Add tomatoes, bouillon cubes, 1 1/2 quarts of water, celery and cabbage.
- Bring to a boil and simmer about 30 minutes until vegetables are tender. Add seasonings, beans and shells.
- Simmer 5 to 10 more minutes. Stir in grated cheese and serve. Serves 4 to 6.
- Preparation time: 10 to 20 minutes.

- 40 to 45 minutes.
