Thai Peanut Ginger Dressing W/ Cabbage Salad
- DRESSING (THAI PEANUT GINGER)
- 4 TB Natural Peanut Butter (No sugar, minimal salt)
- 2 TS Minced Ginger
- 1/4 C Honey
- 1 Orange
- 1 Lime
- 1 TS Garlic
- 1 TB Sesame Oil
- 1 TB Soy Sauce
- 1 TS Chile Paste
- Neutral Oil to balance
- BASE (CORE SALAD INGREDIENTS)
- 4 C Shredded Cabbage (Red, Savoy, Napa, Green or mix)
- 1 C Julienne Carrot
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 1/2 C Honey Roasted Peanuts
- VARIABLES (CAN CHANGE WITHOUT CHANGING ENTIRE DISH)
- Mint - Finely Chopped to serve
- 1/2 C Scallion
- 1 English Cucumber Diced
- Zest orange and juice the orange, juice the lime and combine with all dressing ingredients. Blend until smooth.
- Combine all salad ingredients except peanuts, scallions and mint.
- Serve and let people choose their amount of dressing, peanut, scallion, and mint.
