Badam Barfi (Indian Almond Cakes)

  1. Boil the milk in a saucepan over high heat while stirring until it begins to thicken. Add the sugar, dissolve it and cook for 10 minutes, stirring constantly. Add the ground almonds and cook while continuing to stir constantly until the dough forms a ball that no longer sticks to the edges of the pan. This takes at least 25 minutes. Remove from the heat. Add the ground cardamom and stir.
  2. Pour the dough onto a silicone baking mat and smooth the surface with the back of a spoon. Allow the surface to cool, then score the surface with diamond-shaped cuts. Decorate with cardamom seeds and pistachios.
  3. Completely cut the dough into diamond shapes before it is completely hard.
