Chocolate Chip Banana Bread
- 2 cups Aunt Jemima(R) Original Pancake and Waffle Mix
- 1 cup all purpose flour
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar packed
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 2 large eggs beaten
- 1 cup mashed ripe banana
- 1/2 cup buttermilk
- 1/4 cup vegetable oil
- 1 teaspoon pure vanilla extract
- 6 ounces chocolate chips
- Preheat the oven to 350u0b0F. Spray one large 9-inch or two 8-inch loaf pans with baking spray. Set aside.
- In a medium-size mixing bowl sift together the Aunt Jemima(R) Original Pancake and Waffle Mix, flour, granulated sugar, brown sugar, baking powder, cinnamon and baking soda. Set aside.
- In a separate bowl, whisk together beaten eggs, banana, buttermilk, oil and vanilla.
- Add the wet ingredients to the dry ingredients mixing by hand just until moistened.
- Mix chocolate chips into the batter until evenly distributed. Spread evenly into prepared pan.
- Bake for 50-60 minutes in large loaf pan and 40-45 minutes for medium-size loaf pans or until a toothpick inserted into the center comes back clean. Check at 30 minutes and lay a piece of aluminum foil on top to prevent over browning, if needed.
- Cool in loaf pan for 15 minutes then remove to a cooling rack to cool completely.
